Carl Hiaasen comes to mind and I think would be a perfect fit.
Maybes--Kenneth Oppel's Half-Brother    Richard Adams Plague Dogs.  Jean Craighead George ??

Eating aliens:  one man's adventure hunting invasive animal species by Jackson Landers is not fiction but is a very engrossing read and easily divided into short reads.

If you have access to Ebsco Host's ebooks or Project Muse look at Where the wild things are:  a field guide to ecofiction by Jim Dwyer.   That might help I don't know.
