Ranma 1⁄2 is a bit of older manga. The main character switches gender when hit by hot/cold water. Caution, nudity is used as a comic tool in the series.
Riordan’s Magnus Chase series has a major character that also switches genders.

One character is Ember Felix/Felix Ember depending on how they feel. AND they are part of the crew that takes down the bad guys and it’s no big deal, it just is.
